In order to properly accompany a divine 1999 Chilean Reserve Cab
which I decanted this morning

I have prepared

Aged Highland Beef Steaks
which have been soaking all day
in a marinade which I learned in Brazil
and they take their beef seriously
[I would tell you but apparently its a matter of national security]
[something about the damn Argentineans]

but I can say
that it is a quite delicious blend of liquor, citrus and spices
then encrusted with salt which turns out
the most sumptuous and tender steaks

along side the steaks

Herb and Romano cheese encrusted new potatoes
roasted to perfection

and

a Grilled Vegetable medley composed of
Japanese Eggplant, Portobella Mushroom, Red and Yellow Peppers
tossed in a glaze of hot pepper oil, cayenne pepper, paprika and turmeric

and finally

forelle pear spears

to round the whole thing off
most magnificently
